Ingredients

  • Chopped Baby Spinach - 11oz
  • Sliced Cherry Tomatoes - 31
  • Diced White Onion - 1 medium
  • Cubed Extra Firm Tofu - 1 block chopped
  • Chopped Mini Red Peppers - 5
  • Low salt chickpeas - 1 can
  • Diced mini cucumbers - 4
  • Chopped Walnuts - 1/2 cup

Directions

  1. Heat pain with olive oil
  2. Sautee onions and red peppers until soft
  3. Drain and rinse chickpeas. Sautee until browned and add tofu. Cook until slightly browned
  4. Put all of the sauteed items to the side
  5. Chop spinach, cherry tomatoes, small red peppers, and mini cucumbers
  6. Add sauteed ingredients over salad and mix
  7. Add your favorite dressing
