Ingredients
- Chopped Baby Spinach - 11oz
- Sliced Cherry Tomatoes - 31
- Diced White Onion - 1 medium
- Cubed Extra Firm Tofu - 1 block chopped
- Chopped Mini Red Peppers - 5
- Low salt chickpeas - 1 can
- Diced mini cucumbers - 4
- Chopped Walnuts - 1/2 cup
Directions
- Heat pain with olive oil
- Sautee onions and red peppers until soft
- Drain and rinse chickpeas. Sautee until browned and add tofu. Cook until slightly browned
- Put all of the sauteed items to the side
- Chop spinach, cherry tomatoes, small red peppers, and mini cucumbers
- Add sauteed ingredients over salad and mix
- Add your favorite dressing
